  一不小心,豆腐又被煎碎了,这件事困扰着不少人,如何避免呢?    盐水泡一泡。把切好的豆腐块放入盐水中浸泡20分钟左右,有助豆腐排出一部分水分,使其结构更紧致。    用姜片抹锅。烹炒前,先将锅洗净、擦干、烧热,用鲜生姜片在锅底抹上一层姜汁,使其在锅面形成保护膜,避免豆腐因为粘锅而破碎。    火候选中火。火太小容易把豆腐煎老,口感不好。火太大,频繁翻动容易导致豆腐破碎,所以煎豆腐应该选用中火。▲
